Saturation- How bright or dull a color is.
Old Masters such as Da Vinci, Michelangelo, and Rembrandt worked with a desaturated pallet because the paints they had only came in those colors. It's up to you how you want to work. Or you can work with a desaturated pallet and choose one color to be saturated. This will bring the focus to that part of your painting.
